Halibut with Green Pepper in an Orange Sauce

Ingredients:

1 (6oz/150G) halibut filet
1 medium orange
2 tsp / 10ml white wine
1 tsp/ 5g green pepper
peel of 1 medium orange
4-5 oz / 100ml whipping cream

Directions:

Remove the peel from medium orange and cut into small strips. Squeeze juice from the orange. Place orange juice and peel into shallow container and then add halibut fillet. Cover fish for 2 hours and allow to marinate.
Remove the fish from the marinade and place into a baking dish. Place dish in oven under broil setting.
While fish is cooking, in a small saucepan, heat orange marinade with th egreen pepper, white wine and cream. Reduce heat.
Place the halibut on a bed of basmati rice, add the sauce and garnish according to taste. Serve with vegetables of your choice.
