Marinated Herring Salad

Ingredients:

1 cup of Comeau’s marinated herring in a wine sauce, drained
1 cup potatoes, diced, cooked
1 cup beets, diced, cooked
½ cup dill pickles, chopped
½ small Spanish onion, sliced
8 lettuce leaves
3 eggs, hard cooked, quartered
2 apples, chopped

Cream dressing:
1 cup cream 35%
1tbsp. White vinegar
1 tsp. prepared mustard
½ tsp. dillweed
¼ tsp. salt
¼ tsp. pepper

Directions:

Dressing: in a small bowl, whisk together cream, vinegar, mustard, dill, salt and pepper.
In a large bowl, combine herring, potatoes, beets, apples, pickles and onion. Toss lightly with dressing. Arrange salad on individual lettuce lined plates. Garnish with eggs.
