Smoked Atlantic Salmon Pizza

Ingredients:

¼ cup olive oil
4 medium red onions, sliced in rings
Salt & pepper to taste
2 tbsp. chopped fresh parsley
2 tbsp. thinly sliced scallions
2 tbsp. chopped fresh dill
1/3 cup sour cream
Pizza crust
8 oz (227 gr) Comeau’s cold smoked Atlantic salmon
1/4 red and 1/4 orange peppers thinly sliced in strips
Fresh dill sprigs, for garnish

Directions:

Preheat oven to 450°F (230 °C). Heat olive oil in small pan, add onion and cook 15-20 minutes. Remove pan from heat and add salt and pepper. Combine parsley, scallions and dill, set aside half for garnish. Add remaining mixture to onions and spread on pizza crust. Bake 8-10 minutes. Remove crust from oven and top with salmon pieces and sour cream. Bake an additional 3-5 minutes. Remove from oven and sprinkle with reserved herbs. Garnish with fresh dill if desired. Serve immediately.
