Herring
Delivering industry-superior value and taste is of
greatest importance to Comeau’s Sea Foods – that’s why we adhere
to stringent quality standards for each step in the herring harvesting
process.
Comeau’s Sea Foods owns and operates
three herring seiners equipped with modern cooling equipment to
fast chill our catch. Three supplementary catchers also harvest
herring on our behalf and adhere to strict company quality levels.
Each catch is brought to shore in refrigerated sea water and undergoes
same-day processing in one of our modern facilities nearby.
Together, several divisions of Comeau’s Sea
Foods prepare a variety of herring products including
herring roe, barrel-marinated products, frozen fillets, salt herring,
frozen fillets for smoking, and fresh herring fillets for domestic
markets.
Comeau’s Sea Foods’ Saulnierville
plant, Sea Life Fisheries and Comeau & Saulnier divisions, produce
frozen herring butterfly fillets and finest calibre herring roe
popular around the world – our specialty fillets are exported
widely in Europe, particularly in Germany, while our superior
herring roe is enjoyed in Japan.
For its marinated herring products, Comeau’s
Sea Foods’ own processing facility, Frankland Canning,
intensify natural herring essence with flavours designed for the
domestic market – house blend, white wine, dill, and barbeque.
Other herring products include Bismark Rollmops, Bismark Fillets,
salted dressed, lunch cuts, cocktail rollmops. Salted whole, hard
and soft cured herring are also processed through Frankland Canning.
Comeau-brand products are well-recognized in both
domestic and export markets including Asia, Europe and the United
States. Flexibility in customer relations is key – our products
may be valued to custom requirements and graded to a variety of
specifications.
